What a recent Birmingham hospitality booking looked like
A Brindleyplace restaurant group rang the Midlands line on a Thursday lunchtime: their meat CDP at one of the four sites had given an hour's notice and walked. Dinner service was set for 6pm, 140 covers booked. We named a replacement CDP (classical British background, based in Selly Oak) at 14:10, confirmed travel, and the chef was on-site for 16:30 to prep. The head chef briefed them over a short handover, the replacement ran the section through to last order at 10pm, and the group booked the same chef for the following weekend's service.
