What a recent London events booking looked like
A central London gala at a South Bank venue booked us on the Wednesday for a 400-cover plated dinner on the Saturday. The original event chef had pulled out late Tuesday night citing personal reasons and the caterer needed a replacement who had done 400 plated before, not just 150. We named an event head chef (eight years of 300-500 cover gala work, lived in Bermondsey, walking distance to the venue) by Thursday morning and ran a 30-minute Zoom menu-walkthrough Friday lunchtime. The event ran to time, the caterer booked the same chef for two further Saturdays inside the next eight weeks, and the booking has moved from ad-hoc to standing.
